Scotsman Ice Systems manufacture one of the widest ranges of ice machines in the world with a special focus on flake and scale ice.
Other manufacturers sometimes cause unnecessary confusion as the don’t clearly define the difference between the two types, Scale ice is sometimes sold as Flake ice or vice versa… Making sure that you use the right type can be quite important to prevent avoidable damage or loss of quality to your products.
FLAKE – ‘Soft & Cold’ – flaked ice is the perfect product for displaying fresh produce for sale or to pack delicate items like broccoli or watercress. The ‘warmer’ nature of flake ice prevents freezer burn maximising product quality and shelf life. Especially with products like fresh fish fillets where the ice comes into direct contact with the flesh. Other uses for flake ice include keeping dough and pastry cool in bakeries, ice water baths for washing delicate fresh salad, fruits and vegetables in food production plants.
SCALE – ‘Harder & Colder’ – scale ice is incredibly dense and ‘dry’ with a very low temperature which makes it perfect for the preservation of more resilient fresh produce.The slow melt time makes it the ideal ice for transportation and distribution purposes. Scale ice is Scotsman’s coldest type of ice and is mainly used in big commercial applications, such as on trawlers for fish storage. If necessary, scale ice can be made using either fresh or saltwater. Scale ice is the ideal packing ice for the shellfish industry, the shells protect the delicate flesh from the extreme cold and the slow melt rate keeps packages fresh for far longer than all other ice types.

Smaller Scotsman Flakers produce ice flakes which have a residual water content of approximately 25% making it the ideal ice for fresh food displays as the additional moisture helps prevent drying out and the ‘warmer’ temperature of the ice can reduce or eliminate freezer burn.
Larger, modular flakers produce ‘Superflake’ ice which has a residual water content of around 15%, The flakes are more compact, giving a slower melt time making Superflake ice the perfect choice for storage and transport of fresh produce.
Operators and business which have a wide variety of uses for their ice, such as farm shops with a restaurant or cafes, then Cubelet or Nugget ice could be a better option for you. Flaked ice is the obvious choice for a huge range of medical and scientific applications.
Compared to larger, more uniform styles of ice, flake ice offers a large contact area providing rapid cooling for laboratory work and medical applications. The soft texture makes it perfect for rehabilitation and physical therapy treatments such as ice baths and cooling packs as the ices smooth texture will not damage sensitive skin or delicate areas.
Standard flake ice has a residual water content of approximately 25% giving it a slightly ‘stickier’ more adhesive quality, ideal for ice baths where fast heat transfer is required. The larger Scotsman modular flaked ice machines produce a ‘SuperFlake’ ice which is more compressed than regular flaked ice which has a lower residual water content of approximately 15%. The dryer texture of ‘SuperFlake’ makes it better for ice packs as the initial wetness is less.
